What does HACCP mean?
HACCP stands for Hazard Analysis and Critical Control Points. The HACCP was created to ensure that the safety of our food remains guaranteed. Many things can go wrong when processing foodstuffs in the food industry, so it is important to keep numerous important points in mind including personal hygiene and cleaning.
HACCP standards
The H in HACCP stands for Hazard. This is a ‘hazard' that can be concealed in a food product. The hazard involves the safety of food and concerns the health of the consumer. Some examples of hazards are bacteria, viruses, parasites and moulds. This particularly concerns the hazard of the food itself. But chemical dangers must also be taken into account. Residues of pesticides, dioxins and mould toxins are hazards that can be concealed in food products. Then there are also physical dangers such as bone parts, sharp metal or glass to be considered.
HACCP conditions
Your company must satisfy numerous conditions to be awarded an HACCP certificate. To be able to ensure food safety you must at least bear the following principles in mind:
- Identify the potential hazards of the processes carried out at the establishment. What is the hazard and what are the risks during the processing or production of food?
- Various aspects must be kept well under control to prevent any danger to food safety. These aspects are listed in the Critical Control Points (the CCPs).
- A standard must then be set for each CCP.
- How can these CCPs be systematically controlled? This must be set out in real terms.
- Then an action plan must be drawn up for each CCP. What action is required should it appear that a CCP does not satisfy the set safety standard during the control?
- Regularly carry out a check of your HACCP plan. Does this process ensure sufficient food safety? If not, the HACCP plan must be adapted.
